I had plans to describe the making of this meal in blow-by-blow detail, but I haven’t.
This was a dinner I made back in August to celebrate the brief return to town of two friends. Fortunately, they know how often I don’t quite fully realize a plan and seem to like me anyway.

Small bits of advice:
- The meats will spit, so even if it’s 40C out, dress appropriately.
- Check to see how much charcoal you have or else you’ll be finishing the paella in the oven. Guests appreciate properly cooked chicken, it seems.
