I had plans to describe the making of this meal in blow-by-blow detail, but I haven’t.

This was a dinner I made back in August to celebrate the brief return to town of two friends. Fortunately, they know how often I don’t quite fully realize a plan and seem to like me anyway.

Pictures must suffice. Questions, if any, will be answered.

So … paella on the grill. Thank you to Mr. Raichlen.

Small bits of advice:

  1. The meats will spit, so even if it’s 40C out, dress appropriately.
  2. Check to see how much charcoal you have or else you’ll be finishing the paella in the oven. Guests appreciate properly cooked chicken, it seems.
