Mast-o Khiar

There are various approaches to this. Some people add walnuts and or raisins, both of which are lovely. I grew up with a pared-down version, which I present here.

  • 650 g plain yogurt
  • Three or four small cucumbers, chopped. (Peel them if the skin is bitter, otherwise leave it on.)
  • 1 tsp of salt
  • Pepper
  • 2 tbsp dried mint

Put the yogurt in a bowl and stir it until it’s smooth.

Add the remaining ingredients and mix them together.

Check the salt and pepper levels. Add more if necessary.
